How to Make Coffee and Chocolate Chunk Muffins

Fall is around the corner, which means that it’s almost baking season! If you’re ready to fire up the oven for a warm and luxurious breakfast that everyone will love, we’ve got you covered. These coffee muffins with decadent chocolate chunks are super easy to make, and they’re perfect for crisp, fall mornings. All you need is a hot cup of coffee to go with them!

Here’s how to make these coffee and chocolate chunk muffins. This recipe was adapted from Cooking Light.

INGREDIENTS

2/3 cup whole milk

½ stick of melted butter

1 tablespoon vanilla extract

3 tablespoons strong-brewed coffee (directions below)

1 egg

2 cups flour

1 cup sugar (reserve 2 tablespoons for sprinkling)

1/2 cup chocolate chunks

2 teaspoons baking powder

1/4 teaspoon salt

RECIPE

1. Preheat oven to 400°.

2. Double brew your coffee – this can be done by adding twice the amount of coffee you normally would to your brewer, with the same amount of water. Set 2 tablespoons of the coffee aside. We recommend using European Gourmet for this recipe, but any of our coffees would be great!

3. Combine all ingredients into a bowl and mix thoroughly with a whisk.

4. Divide batter among 12 muffin cups coated with cooking spray. Bake at 400° for 15 minutes.

5. Remove muffins from oven, sprinkle tops with remaining sugar and bake for another 3-5 minutes, or until muffins are done and sugar is crystallized. Enjoy!
