How To Make Peppermint Mocha Cupcakes

We have saved one of our best holiday recipes for last! Peppermint Mocha Cupcakes.

Like most, you are probably in the middle of your holiday shopping, planning and party preparation. If you've been following us on Pinterest you've seen our Holiday Recipe board and the great, easy to do recipe ideas. Well, we have another great one for you to try out - Peppermint Mocha Cupcakes! This perfect blend of coffee, chocolate and peppermint will be sure to be the talk of any holiday party.


Ingredients:

  • 1/2 Teaspoon peppermint extract 
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon of baking soda
  • 3/4 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 2 eggs
  • 1 tablespoon of finely ground Royal Cup Coffee (use whichever blend you enjoy most! available on our webstore )
  • 2 ounces of semi-sweet baking chocolate
  • 1/4 cup of packed light brown sugar
  • 1/2 cup of unsalted butter
  • 1/2 cup of granulated sugar
  • 1/2 cup of unsweetened cocoa powder (optional)
  • 1/2 cup of milk
  • 3/4 cup of all-purpose flour
  • Peppermint Vanilla Frosting
    • 1 cup of unsalted butter, softened
    • 3-4 cups confectioners' sugar
    • 1/4 cup heavy cream
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon peppermint extract
    • Crushed Candy canes

Directions:

  1. Pre heat oven to 350 degrees
  2. Set out your 12 cup cupcake/muffin pan with cupcake liners
  3. Melt butter and chocolate together in microwave, then add coffee, stir well
  4. In a medium bowl, toss the cocoa powder, flour, baking soda, baking powder and salt together. Set aside
  5. In a large bowl whisk together eggs, sugar, brown sugar, vanilla extract and peppermint extract
  6. Add butter/chocolate mix from earlier into large bowl and whisk until smooth
  7. Add medium bowl and large bowl together and mix, batter will be very thick. 
  8. Pour batter into your cupcake/muffin pan, 
  9. Bake for 18 minutes
  10. While baking create your Peppermint Frosting
    1. Beat softened butter with electric mixer for 3 minutes
    2. Add powdered sugar, cream, vanilla extract and peppermint extract
    3. Beat mixture for 3 additional minutes on high setting
  11. Add Peppermint frosting to finished cupcakes along with crushed candy canes for topping.
  12. Enjoy!
